This simple recipe can use up left overs or be topped with small amounts of deli meat from your local supermarket.

Method

Preheat the oven to 200°C.

Place the baguette slices on a baking sheet and toast for 2-3 minutes per side until golden brown. Remove from oven.

Switch the oven onto grill and arrange grated cheese and sliced meat on top. Grill for 1-2 minutes until just melted. Be careful, the bread will burn easily.

While the cheese is melting, combine the chopped tomatoes, yellow capsicum, minced garlic, olive oil and pinch salt/pepper to taste.

Remove bread from oven, top with tomato mixture and sprinkle with basil.
