This recipe is super quick to throw together and the flavors really compliment salmon. The marinating step is optional as it still tastes great without marinating it.

Method
- Optional marinade step: in a small dish mix orange juice and thyme; add the salmon to it to marinate for at least 30 minutes.
- Pre - heat the oven to 200 C.
- In a small bowl mix together brown sugar, paprika, cinnamon, beef, salt and pepper.
- Take the salmon out of the marinade and discard marinade (if using). Rub the paprika mixture over the flesh of the salmon fillets and place in an ovenproof dish.
- Bake for about 10 minutes or until cooked through. It will ake longer if using a very thick piece of salmon.
Serving Suggestion: serve with potato or rice and vegetables or salad.
Variation: add a dash of ground cumin and/or a pinch of chilli powder to the rub mixture.
