This chicken dish is great for a special occasion or when you have a guest for dinner. It is a bit fiddly to put together but well worth the effort!

Method
1. Preheat oven to 200°C. Grease an oven dish with oil.
2. In a bowl mix together breadcrumbs, walnuts, cranberries, garlic, parsley, salt, pepper and water.
3. Cut chicken breast (s) 3⁄4 through on the side (like slicing into a burger bun) and open like a book.
4. Divide stuffing into two servings if making 2 servings. Place stuffing in the centre of chicken breast, then fold to close. Ensure stuffing is inside the chicken breast.
5. Wrap 2-3 rashers of bacon around the outside of chicken breast (s). Secure with toothpicks.
6. Place chicken breast (s) in oven dish and cover with 3 T of cranberry sauce.
7. Bake for 25-30 minutes. Check that chicken is thoroughly cooked through.
Serving Suggestion: Serve with potatoes and your choice of vegetables or salad.
