This is a simple and delicious way to make a chicken dinner into something a bit more interesting.

Method
- Pre-heat the oven to 180oC.
- Lightly grease an ovenproof dish with a pastry brush and oil or oil spray.
- Place orange juice and rind in a bowl and the breadcrumbs in another bowl.
- Dip each piece of chicken in the juice and then the crumbs.
- Place in oven-proof dish and bake for 30 minutes.
- While the chicken is cooking make the sauce. Add chicken stock powder and hot water, honey, mustard, cornflour, salt and pepper to the leftover orange juice. Mix well. Pour over chicken and return to the oven for a further 10 minutes.
Serving Suggestion: serve with mashed potatoes and cooked vegetables.
