Method
- Beat eggs with milk, salt and pepper and herbs.
- Melt margarine in pan and, when hot, pour in mixture.
- Cook over moderate heat lifting mixture with a spatula so uncooked egg runs underneath.
- Increase heat to brown omelet. When mixture is set sprinkle with grated cheese.
- Loosen from pan with spatula and fold in half.
- Turn onto hot serving plate.
Variation: replace grated cheese with finely chopped cooked ham or crisp bacon.
